I love to bake…I’ve always loved to bake…and then it happened….I adopted a new way of eating and here I am, relearning all the baking rules.
I’ve tried to make muffins several times in the last few months and most have been a dismal fail. I was so sad. They were so horrible that most were filed immediately into file 13….ugh…
I decided not to give up. We had fresh strawberries and I knew they needed to be made into muffins. I found this recipe and hesitantly tried to recreate. I was terrified. After all, typically, baking with only almond flour produces a dry crumbly muffin. I have to tell you, THESE WERE AMAZING!!!! I am so happy I didn’t give up. I will make these again. They are flavorful and moist and utterly delicious.
