Quick, Cool Lunch

When the days get extra hot, like today did, well, to be more specific, extra humid. Nothing beats a nice cool lunch, and when I think of eating cool, I think lettuce(a cool season crop), tomatoes(available now), avacado, and microgreens(available year around).

In this instance we added some balsamic grilled chicken, and feta with some homemade paleo style balsamic vinegret dressing.

And as I finish this, in typical Oklahoma fashion, a magnificant storms roll in, the temperature drops 20 degrees.
